I love a good classic tuna salad. It’s quick to put together and is always so satisfying.
For this tuna salad toast, all you need is a slice of bread (preferably sourdough), a handful of arugula, freshly made tuna salad, and pickled onions. The pickled onion really does it for this combo.

For this tuna salad toast, all you need is a slice of bread (preferably sourdough), a handful of arugula, freshly made tuna salad, and pickled onions.
Ingredients
1 5oz can of tuna, packed in olive oil
1 celery stalk
1 pickle spear
2 tablespoons mayo
1/2 lemon, juiced
1 teaspoon Dijon mustard
1/4 herbs (dill, parsley or both), finely chopped
salt and pepper
1 piece sourdough bread, toasted
handful of arugula
cracked pepper, olive oil and a lemon wedge for serving
Directions
- Finely chop the celery stalk and pickle spear and add to medium-sized bowl. Add mayo, lemon juice, dijon mustard, chopped herbs, and season with salt and pepper. Mix to form a dressing.
- Drain the can of tuna and add to the dressing with a fork. Mix until combined, using the fork to mash the bigger hunks of tuna.
- To assemble the toast, spread a thin layer of mayo on a piece of toasted sourdough bread. Top with a generous handful of arugula. Add the tuna salad on top (if you have a large slice of toast it should all fit). Top with pickled onion slices, fresh cracked pepper, and a drizzle of olive oil.
- Slice in half and serve with additional lemon wedges.
