This brussels sprout & apple salad is a simple salad that you should definitely add to your weekly dinner routine. It’s dressed up with my non-mayo honey mustard dressing and it’s crisp, light and so so yummy.

The shaved brussels sprouts and sweet honey crisp apple makes a fresh, crisp and light salad. Perfect on a hot summer day when you don’t feel like turning on the oven.
Brussels sprouts often get a bad rep, but have you tried eating them raw? Might not sound that appealing, but it’s a great way to eat them! Just shave them using a food processor or by hand if you don’t have one. Add some chopped honey crisp apple, toasted almonds, grated parmesan and toss with the honey mustard dressing. So simple.
This salad would also be really good with some added crispy bacon, grilled chicken, or dried cranberries!

Honey Mustard Brussels Sprout & Apple Salad
This brussels sprout & apple salad is a simple, healthy salad that is dressed up with a non-mayo honey mustard dressing. It’s crisp, light and so so yummy!
Ingredients
1 pound brussels sprouts
2 chopped honey crisp apples
1/2 cup toasted almonds
1/2 cup grated parmesan cheese
- Honey Mustard Dressing
1/2 cup Greek yogurt
1/4 cup dijon mustard
1/4 cup honey
1 tablespoon apple cider vinegar
1 grated garlic clove
1/2 teaspoon salt
1/4 teaspoon pepper
Directions
- Start by making the honey mustard dressing. Add Greek yogurt, dijon mustard, honey, apple cider vinegar, grated garlic clove, salt and pepper to a mason jar and mix together until uniform.
- Shave the brussels sprouts with a food processor or by hand and add to a large bowl.
- Add the chopped honey crisp apple, toasted almonds and parmesan cheese then toss with the honey mustard dressing.
