THE BEST BLONDIES EVER

When your feeling lazy and want a delicious cookie, but don’t want the hassle, blondies are here to save the day. They are super quick to put together – no refrigerating dough or scooping into balls, just press into a lined baking dish and bake.

I am obsessed with all things cookie, peanut butter, and chocolate. Such a beautiful combo. These blondies are always on repeat in my kitchen.

HOW TO MAKE CHOCOLATE PEANUT BUTTER BLONDIES

To make the blondies, get a bowl and cream together melted butter, peanut butter and sugar on medium speed for a few minutes. Add the eggs one at a time followed by the vanilla.

In a separate bowl, sift the flour, baking soda, cornstarch and salt. Slowly add to the wet ingredients and mix until just combined. Fold in the chocolate chips and scoop out into a lined baking dish. I used a 11×7 pan size, which I don’t think is very common. I recommend using an 8×8 pan instead. Top with additional chocolate chips because, why not?

Bake at 350°F for 25-30 minutes. If you like gooier bars bake for less time, or if you like a more done bar bake for more time.

Ingredients

  • 1/2 cup melted unsalted butter

  • 1 cup brown sugar

  • 1/2 cup creamy peanut butter

  • 2 eggs

  • 2 teaspoons vanilla

  • 1 1/2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon cornstarch

  • 1/2 teaspoon salt

  • 1 cup chocolate chips

Directions

  • Preheat oven to 350°F. Grease an 11×7 or 8×8 baking dish and line with parchment paper.
  • In a large mixing bowl, add melted butter, peanut butter and brown sugar. Cream together until it turns light. Add the eggs one by one followed by the vanilla until well combined.
  • In a medium sized bowl, sift the flour, baking soda, cornstarch, and salt. Then slowly pour into the wet ingredients and fold in chocolate chips.
  • Scoop dough into the prepared baking dish. Spread the dough evenly and top with additional chocolate chips. Bake for 25-30 minutes or until just done in the center.  (If you like gooier bars bake for less time) Allow to cool and then cut into 12 pieces.
